How to make it
A simple way to cook it
Soften garlic in olive oil until fragrant but not browned. Add tomatoes, chickpeas and orzo with enough water or stock to cook gently. Simmer until the orzo is tender and the sauce looks glossy rather than wet. Finish with basil, black pepper and a final drizzle of olive oil.
Start with the anchor
Let Orzo lead the flavour, then keep the rest simple.
Add something substantial
Beans, grains, pasta, potatoes or greens can turn it into a proper meal.
Finish with contrast
Herbs, lemon, yoghurt, nuts or olive oil make the plate feel more complete.
