A simple way to cook it
Cook the giant couscous until tender, then dress it with olive oil and lemon while warm. Warm the butter beans with rose harissa, a splash of water and the roasted peppers until the sauce turns glossy. Fold the couscous through the beans so it catches the harissa dressing. Finish with parsley, yoghurt and a little extra lemon.
