A simple way to cook it
Cook the farro until chewy but tender, then drain well. Fry the mushrooms in a hot pan until deeply browned and concentrated. Stir in garlic, white miso and a splash of water to make a savoury glaze. Fold through the greens until just wilted, then spoon over the farro.
